  5. 5. Add 1 star anise, 1/2 teaspoon of Szechuan pepper, cinnamon, and fennel to the boiling water.
  6. 6. Place the meat into the pot.
  7. 7. Make sure the meat is completely covered with water.
  8. 8. Reduce the heat to a low setting.
  9. 9. Simmer the meat gently for about 2 hours.
  10. 10. Remove the cooked meat from the broth.
  11. 11. Let the meat cool down.
  12. 12. Shred the cooled meat into small pieces.
  13. 13. Strain the broth through a fine sieve into a clean pot.
  14. 14. Wash the spring onions under cold water.
  15. 15. Remove the dry ends of the spring onions.
  16. 16. Slice the spring onions diagonally into thin rings.
  17. 17. Grate the ginger finely.
  18. 18. Peel the garlic cloves.
  19. 19. Mince the garlic very finely.
  20. 20. Cook the noodles according to the instructions on the package.
  21. 21. Rinse the cooked noodles with cold water.

  23. 23. Heat the oil in a large pot.
  24. 24. Fry the shredded meat on high heat.
  25. 25. Add the grated ginger and minced garlic.
  26. 26. Add the remaining Szechuan pepper and star anise.

  28. 28. Sprinkle the sugar over the mixture.
  29. 29. Stir until the sugar dissolves.
  30. 30. Deglaze the pot with the prepared broth.
  31. 31. Add the sliced spring onions to the soup.
  32. 32. Pour the rice wine into the soup.
  33. 33. Simmer the soup on low heat for about 10 minutes.
  34. 34. Add the drained noodles to the finished soup.
  35. 35. Season the soup with soy sauce.
  36. 36. Salt the soup to taste.
