🍝 Chinese-style noodle soup with aromatic broth

Ingredients
- 350 g beef (e.g. brisket)
- 2 star anise
- 1 tsp Sichuan pepper
- cinnamon stick
- 1 tsp fennel seeds
- 4 spring onions
- 10 g ginger (1 piece)
- 3 garlic cloves
- 150 g Chinese egg noodles
- 1 tbsp oil
- sugar
- 2 tbsp rice wine
- soy sauce
- salt
Instructions
- 1. Rinse the meat under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Pour 2 liters of water into a large pot.
- 4. Bring the water to a boil.
- 5. Add 1 star anise, 1/2 teaspoon of Szechuan pepper, cinnamon, and fennel to the boiling water.
- 6. Place the meat into the pot.
- 7. Make sure the meat is completely covered with water.
- 8. Reduce the heat to a low setting.
- 9. Simmer the meat gently for about 2 hours.
- 10. Remove the cooked meat from the broth.
- 11. Let the meat cool down.
- 12. Shred the cooled meat into small pieces.
- 13. Strain the broth through a fine sieve into a clean pot.
- 14. Wash the spring onions under cold water.
- 15. Remove the dry ends of the spring onions.
- 16. Slice the spring onions diagonally into thin rings.
- 17. Grate the ginger finely.
- 18. Peel the garlic cloves.
- 19. Mince the garlic very finely.
- 20. Cook the noodles according to the instructions on the package.
- 21. Rinse the cooked noodles with cold water.
- 22. Let the noodles drain well.
- 23. Heat the oil in a large pot.
- 24. Fry the shredded meat on high heat.
- 25. Add the grated ginger and minced garlic.
- 26. Add the remaining Szechuan pepper and star anise.
- 27. Fry everything on high heat until fragrant.
- 28. Sprinkle the sugar over the mixture.
- 29. Stir until the sugar dissolves.
- 30. Deglaze the pot with the prepared broth.
- 31. Add the sliced spring onions to the soup.
- 32. Pour the rice wine into the soup.
- 33. Simmer the soup on low heat for about 10 minutes.
- 34. Add the drained noodles to the finished soup.
- 35. Season the soup with soy sauce.
- 36. Salt the soup to taste.
- 37. Serve the soup hot.
