🍝 Hearty Noodle Soup with Sausages

Ingredients
- 250 g elbow macaroni
- salt
- 2 stalks leek
- 3 carrots
- 800 ml vegetable broth
- 3 pairs Vienna sausages
- 2 tbsp fresh chopped parsley
- salt
Instructions
- 1. Bring a pot of water and salt to a boil.
- 2. Cook the noodles in it for about 20 minutes until al dente.
- 3. Drain the noodles and set them aside.
- 4. Wash the leek thoroughly.
- 5. Remove the green tops and root ends from the leek.
- 6. Slice the white part of the leek into thin rings.
- 7. Peel the carrots.
- 8. Dice the carrots into small cubes.
- 9. Bring the broth to a boil in a separate pot.
- 10. Add the diced carrots and leek rings to the boiling broth.
- 11. Let the vegetables simmer for about 5 minutes over low heat.
- 12. Slice the Vienna sausages into rounds.
- 13. Add the sausage slices to the soup.
- 14. Heat the sausage through in the soup for 2 to 3 minutes.
- 15. Stir the drained noodles into the soup.
- 16. Finely chop the parsley and add it to the soup.
- 17. Season the soup to taste with salt.
- 18. Serve the soup hot.
