  1. 1. Bring a pot of water and salt to a boil.
  2. 2. Cook the noodles in it for about 20 minutes until al dente.
  3. 3. Drain the noodles and set them aside.
  4. 4. Wash the leek thoroughly.
  5. 5. Remove the green tops and root ends from the leek.
  6. 6. Slice the white part of the leek into thin rings.
  7. 7. Peel the carrots.
  8. 8. Dice the carrots into small cubes.
  9. 9. Bring the broth to a boil in a separate pot.
  10. 10. Add the diced carrots and leek rings to the boiling broth.
  11. 11. Let the vegetables simmer for about 5 minutes over low heat.
  12. 12. Slice the Vienna sausages into rounds.
  13. 13. Add the sausage slices to the soup.
  14. 14. Heat the sausage through in the soup for 2 to 3 minutes.
  15. 15. Stir the drained noodles into the soup.
  16. 16. Finely chop the parsley and add it to the soup.
  17. 17. Season the soup to taste with salt.
  18. 18. Serve the soup hot.
