🍝 Pasta Salad with Snow Peas and Shrimp

Ingredients
- 400 g Spaghetti
- 100 g thin green beans
- 100 g snow peas
- 400 g Shrimp (kitchen-ready, pre-cooked)
- Radicchio
- 1 red chili pepper
- fresh cilantro
- 6 tbsp lemon juice
- 4 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Cook the pasta in plenty of salted boiling water until al dente. Drain, rinse briefly with cold water, and let them drain well.
- 2. Wash the beans and peas. Blanch them (cook briefly in boiling water) for about 5 minutes in salted water. Drain, rinse with cold water, let drain, and then slice them lengthwise into thin strips.
- 3. Wash the radicchio, shake it dry, and slice it into strips. Wash the chili pepper and slice it into rings.
- 4. Whisk together lemon juice, oil, salt, and pepper to make a dressing. Toss the salad ingredients and pasta together and mix in the dressing.
