🍝 Pasta salad with sweet potatoes

Ingredients
- 400 g spiral pasta
- 200 g frozen peas
- 2 larger sweet potatoes
- 2 small red chili peppers
- olive oil
- 2 tbsp freshly squeezed lemon juice
- salt
- pepper from the mill
Instructions
- 1. Put the frozen peas into boiling salted water and cook them for about 3 minutes.
- 2. Remove the peas from the water and let them drain well.
- 3. Peel the sweet potatoes and cut them into small cubes.
- 4. Heat 2 tablespoons of oil in a frying pan.
- 5. Fry the sweet potato cubes in the pan until golden brown on all sides.
- 6. Season the cooked potatoes with salt and pepper.
- 7. Wash the chili peppers thoroughly.
- 8. Cut off the top of the chili peppers and remove the seeds with a sharp knife.
- 9. Slice the deseeded chili peppers into thin rings.
- 10. Cook the pasta in plenty of salted water until al dente.
- 11. Drain the pasta.
- 12. Put the pasta into a large bowl.
- 13. Add the sweet potatoes, peas, 4 tablespoons of olive oil, and the chili rings to the bowl.
- 14. Mix all ingredients well together.
- 15. Let the salad cool down for a short while.
- 16. Stir the lemon juice into the cooled salad.
- 17. Portion the salad into small bowls.
- 18. Serve the salad lukewarm.
