🍝 Fresh Pasta Salad with Asparagus and Turkey

Ingredients
- 300 g green asparagus
- salt
- 250 g whole grain pasta (e.g. spirelli)
- 10 radishes
- 1 organic lemon
- 1 bunch chives
- 60 g smoked turkey breast (sliced)
- 1 tbsp rapeseed oil
- 2 tbsp sour cream (10% fat)
- pepper
- 1 pinch sugar
Instructions
- 1. Wash the asparagus thoroughly.
- 2. Peel the lower part of the asparagus with a vegetable peeler.
- 3. Cut off the hard, woody ends of the asparagus.
- 4. Cut the asparagus into diagonal pieces about two centimeters long.
- 5. Bring a large pot of salted water to a boil.
- 6. Cook the asparagus in the boiling water for four to five minutes.
- 7. Remove the asparagus from the water using a slotted spoon.
- 8. Shock the asparagus immediately under cold water to stop the cooking process.
- 9. Let the asparagus drain well.
- 10. Cook the pasta in the same asparagus water according to the package instructions until al dente.
- 11. Wash the radishes thoroughly.
- 12. Slice the radishes into thin rounds.
- 13. Wash the lemon under hot water.
- 14. Dry the lemon with a cloth.
- 15. Grate the fine zest of the lemon finely.
- 16. Cut the lemon in half.
- 17. Squeeze the juice from the lemon.
- 18. Wash the chives.
- 19. Shake the chives dry.
- 20. Cut the chives into small rings.
- 21. Cut the turkey breast into thin strips.
- 22. Drain the pasta.
- 23. Let the pasta drain well.
- 24. Save about fifty milliliters of the pasta water.
- 25. Add two tablespoons of lemon juice to a large bowl.
- 26. Add the saved pasta water to the bowl.
- 27. Add the lemon zest to the bowl.
- 28. Add rapeseed oil to the bowl.
- 29. Add sour cream to the bowl.
- 30. Whisk all the dressing ingredients together well.
- 31. Season the dressing with salt.
- 32. Season the dressing with pepper.
- 33. Season the dressing with coconut blossom sugar.
- 34. Add the asparagus to the pasta bowl.
- 35. Add the pasta to the bowl.
- 36. Add the radishes to the bowl.
- 37. Add the chives to the bowl.
- 38. Toss all ingredients gently together.
- 39. Season the salad with salt.
- 40. Season the salad with pepper.
- 41. Add the remaining lemon juice.
- 42. Serve the pasta salad immediately.
