🍝 Fresh Pasta Salad with Asparagus

Ingredients
- 300 g green asparagus
- salt
- 250 g whole grain pasta (e.g. spirelli)
- 10 radishes
- 1 organic lemon
- 1 bunch chives
- 60 g smoked turkey breast (sliced)
- 1 tbsp rapeseed oil
- 2 tbsp sour cream (10% fat)
- pepper
- 1 pinch sugar
Instructions
- 1. Thoroughly wash the asparagus.
- 2. Peel the lower part of the asparagus.
- 3. Cut off the woody ends.
- 4. Cut the asparagus into 2 cm long pieces.
- 5. Bring plenty of salted water to a boil.
- 6. Cook the asparagus for 4 to 5 minutes.
- 7. Remove the asparagus with a slotted spoon.
- 8. Rinse the asparagus under cold water to stop cooking.
- 9. Let the asparagus drain well.
- 10. Cook the pasta in the same water until al dente.
- 11. Follow the time indicated on the package.
- 12. Clean the radishes.
- 13. Wash the radishes.
- 14. Slice the radishes thinly.
- 15. Rinse the lemon under hot water.
- 16. Dry the lemon.
- 17. Grate the lemon zest finely.
- 18. Cut the lemon in half.
- 19. Squeeze the lemon juice.
- 20. Wash the chives.
- 21. Shake the chives dry.
- 22. Cut the chives into small rings.
- 23. Slice the turkey breast into thin strips.
- 24. Drain the pasta.
- 25. Let the pasta drain.
- 26. Save about 50 ml of pasta water.
- 27. Add 2 tablespoons of lemon juice to a large bowl.
- 28. Add the saved pasta water.
- 29. Add the lemon zest.
- 30. Add rapeseed oil.
- 31. Add sour cream.
- 32. Whisk the ingredients for the dressing.
- 33. Season with salt.
- 34. Season with pepper.
- 35. Season with coconut blossom sugar.
- 36. Add the asparagus to the bowl.
- 37. Add the pasta to the bowl.
- 38. Add the radishes to the bowl.
- 39. Add the chives to the bowl.
- 40. Mix everything gently.
- 41. Taste the salad and adjust with salt.
- 42. Taste the salad and adjust with pepper.
- 43. Add remaining lemon juice.
- 44. Serve the pasta salad.
