🍝 Refreshing Pasta Salad with Arugula and Tuna

Ingredients
- 400 g Penne
- Salt
- 40 g Pine nuts
- 80 g Arugula
- 250 g Tuna can (in its own juice)
- 1 Garlic clove
- 3 tbsp white balsamic vinegar
- 1 tbsp Lemon juice
- 5 tbsp Olive oil
- 2 tbsp Chive rings
Instructions
- 1. Boil water in a large pot and add some salt.
- 2. Add the penne pasta to the boiling water and cook until al dente (firm to the bite).
- 3. Drain the pasta and rinse briefly with cold water to cool them down.
- 4. Let the pasta drain well in a colander.
- 5. Heat a pan without fat and toast the pine nuts until golden brown.
- 6. Remove the pine nuts from the pan and let them cool down completely.
- 7. Wash the arugula (arugula is a type of leaf salad) under running water.
- 8. Remove any thick stems or wilted green parts from the arugula.
- 9. Dry the arugula thoroughly, for example using a salad spinner or kitchen towels.
- 10. Tear the arugula leaves into bite-sized pieces.
- 11. Open the can of tuna and drain the water or oil.
- 12. Take the tuna out of the can and break it into coarse pieces using a fork.
- 13. Peel the garlic clove and cut it into very small cubes.
- 14. Whisk the balsamic vinegar, lemon juice, and oil together in a small bowl.
- 15. Season the dressing mixture with salt to taste.
- 16. Add the drained pasta, arugula, tuna, pine nuts, and garlic to a large bowl.
- 17. Pour the dressing over the ingredients and mix everything well together.
- 18. Serve the salad on plates.
