🍝 Salmon pasta salad with crunchy broccoli

Ingredients
- 400 g small shell pasta
- salt
- 250 g broccoli florets
- 0.5 cucumber
- 150 g smoked salmon (sliced)
- 200 g yogurt
- 2 tbsp fresh chopped dill
- 1 tbsp chive rings
- 1 tsp horseradish (jar)
- 2 tbsp white balsamic vinegar
- 1 tbsp lemon juice
- 2 tbsp rapeseed oil
- pepper (from the mill)
- 1 pinch sugar
- 2 tbsp pumpkin seeds (roasted and salted)
Instructions
- 1. Bring a large pot of water to a boil and add salt.
- 2. Add the pasta to the boiling water.
- 3. Cook the pasta until al dente (firm to the bite).
- 4. Drain the pasta.
- 5. Rinse the pasta with cold water to cool it down.
- 6. Let the pasta drain well.
- 7. Fill a new pot with water and add salt.
- 8. Bring the water to a boil again.
- 9. Add the broccoli to the boiling water.
- 10. Cook the broccoli for 4 to 5 minutes.
- 11. The broccoli should still have a slight crunch.
- 12. Drain the broccoli.
- 13. Rinse the broccoli with cold water.
- 14. Let the broccoli drain well.
- 15. Wash the cucumber under running water.
- 16. Remove the hard ends of the cucumber.
- 17. Slice the cucumber into thin slices.
- 18. You can also grate the cucumber if you prefer.
- 19. Take the salmon out of the package.
- 20. Break the salmon into small pieces.
- 21. You can also cut the salmon into strips.
- 22. Put the yogurt into a small bowl.
- 23. Add the herbs to the bowl with the yogurt.
- 24. Add the horseradish to the bowl.
- 25. Add the balsamic vinegar to the bowl.
- 26. Squeeze the lemon juice into the bowl.
- 27. Add the oil to the bowl.
- 28. Season the mixture with salt.
- 29. Season the mixture with pepper.
- 30. Add the sugar to the bowl.
- 31. Whisk all the dressing ingredients together well.
- 32. Taste the dressing.
- 33. Add a little water if the dressing is too thick.
- 34. Take a large salad bowl.
- 35. Add the drained pasta to the bowl.
- 36. Add the cucumber slices to the bowl.
- 37. Add the salmon pieces to the bowl.
- 38. Mix the pasta, cucumber, and salmon together.
- 39. Pour the dressing over the pasta mixture.
- 40. Distribute the broccoli florets over the salad.
- 41. Sprinkle the pumpkin seeds over the salad.
- 42. Serve the salad.
