🍝 Fresh Pasta Salad with Shrimp

Ingredients
- 250 g Chinese egg noodles
- 250 g snow peas
- 1 small red onion
- 2 spring onions
- 400 g fresh shrimp
- 4 tbsp roasted sesame seeds
- sesame oil
- 3 limes (juice)
- lemons (juice)
- 1 small red chili pepper
- salt
- 1 tsp chopped coriander leaves
- 1 tbsp chopped parsley
- 1 tbsp chive rings
Instructions
- 1. Thoroughly wash the snow peas.
- 2. Trim the hard ends off the snow peas.
- 3. Boil the snow peas for 6 minutes in boiling salted water (this is called blanching, i.e., cooking briefly in hot water).
- 4. Remove the snow peas from the water and let them drain well.
- 5. Cook the pasta according to the package instructions.
- 6. Let the cooked pasta cool down.
- 7. Peel the onion.
- 8. Slice the onion into very thin strips.
- 9. Wash the spring onions.
- 10. Remove the ends of the spring onions.
- 11. Slice the spring onions into thin diagonal rings.
- 12. Season the shrimp with salt and pepper.
- 13. Drizzle the shrimp with lemon juice.
- 14. Wash the chili pepper.
- 15. Cut open the chili pepper.
- 16. Remove the seeds from the chili pepper.
- 17. Slice the chili pepper into strips.
- 18. Heat 2 to 3 tablespoons of sesame oil in a pan.
- 19. Fry the shrimp in the oil over medium heat.
- 20. Let the fried shrimp cool down slightly.
- 21. Mix the cooled pasta with the shrimp.
- 22. Add the snow peas to the mixture.
- 23. Add the sliced onions to the mixture.
- 24. Add the spring onions to the mixture.
- 25. Add the lime juice to the mixture.
- 26. Add 3 tablespoons of sesame oil to the mixture.
- 27. Add the chili strips to the mixture.
- 28. Add the coriander to the mixture.
- 29. Add the parsley to the mixture.
- 30. Add the chives to the mixture.
- 31. Add the sesame seeds to the mixture.
- 32. Season the salad finally with salt.
- 33. Divide the finished salad into small bowls.
- 34. Serve the salad immediately.
