🍝 Fresh Noodle and Fish Salad

Ingredients
- 400 g ribbon noodles
- 1 shallot
- 50 g smoked salmon
- 150 g smoked fish to your liking (e.g. trout)
- 0.25 cucumber
- 50 g pumpkin seeds
- salt
- white pepper
- 4 tbsp lemon juice
- 4 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 1 pinch mustard
- 0.5 tsp sugar
Instructions
- 1. Boil water in a large pot and add plenty of salt.
- 2. Cook the pasta in it until al dente, exactly as directed on the package.
- 3. Drain the pasta and rinse it briefly with cold water so they do not stick.
- 4. Let the pasta drain well in a colander.
- 5. Peel the shallot and chop it very finely.
- 6. Wash the cucumber thoroughly.
- 7. Cut the cucumber lengthwise into eight wedges.
- 8. Cut these wedges into bite-sized pieces.
- 9. Cut the salmon into thin strips.
- 10. Break the smoked fish into small pieces.
- 11. Mix lemon juice, vinegar, mustard, salt, sugar, pepper, and oil in a bowl to make a dressing.
- 12. Add the drained pasta, pumpkin seeds, cucumber pieces, salmon, and smoked fish to a large bowl.
- 13. Gently fold the ingredients into the dressing so nothing breaks apart.
- 14. Cover the bowl and place it in the refrigerator for about one hour.
- 15. Let the salad marinate so the flavors blend well.
