🍝 Fruity Pasta Salad with Strawberries

Ingredients
- 400 g short tubular pasta (e.g. Ditali)
- Salt
- 5 tbsp olive oil
- 0.5 cucumber
- 80 g arugula (1 bunch)
- 200 g oak leaf lettuce
- 100 g red cabbage
- 200 g strawberries
- 30 g capers (2 tbsp)
- 1 lemon (juice)
- 1 tsp mustard
- 1 tsp honey
- Pepper
Instructions
- 1. Boil plenty of water in a pot and add some salt.
- 2. Cook the pasta in it according to the package instructions until al dente.
- 3. Drain the pasta in a colander and let it drain well.
- 4. Stir 1 tablespoon of oil into the warm pasta.
- 5. Let the pasta cool down completely.
- 6. Wash the cucumber and cut it into small cubes.
- 7. Wash the arugula and the salad greens.
- 8. Spin the vegetables dry.
- 9. Tear the salad leaves into smaller pieces if necessary.
- 10. Wash the red cabbage and cut it into thin strips.
- 11. Wash the strawberries and remove the green tops.
- 12. Slice the strawberries crosswise.
- 13. Place the cooled pasta in a large bowl.
- 14. Add the cucumber cubes, arugula, salad greens, and red cabbage.
- 15. Mix all ingredients well together.
- 16. Fold in the capers and the strawberry slices.
- 17. Whisk lemon juice, mustard, honey, salt, pepper, and the remaining oil for the dressing.
- 18. Pour the dressing over the salad.
- 19. Mix everything well.
- 20. Let the salad marinate for a short time.
