🍝 Pasta Salad with Duck Breast and Shrimp

Ingredients
- 110 g rice noodles
- 1 tbsp soybean oil
- 2 tbsp spring onions
- 2 tbsp coriander leaves
- 1 tbsp peppermint
- 225 g duck breast fillet (cooked and sliced thinly)
- 8 shrimp
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp orange juice (freshly squeezed)
- salt
- lime wedges (for garnish)
Instructions
- 1. Cook the pasta in plenty of salted water until al dente (firm to the bite). Drain the pasta, rinse it briefly with cold water to stop the cooking process, set it aside, and let it cool down slightly.
- 2. Mix the soy oil, sliced spring onions, coriander leaves, mint leaves, lime juice, orange juice, meat, and shrimp in a bowl. Let the mixture marinate briefly, then pour it over the lukewarm pasta.
- 3. Toss everything together once more and serve the salad garnished with lime slices. Season to taste with salt and add a little more lime juice if desired.
