🍝 Colorful Pasta Salad with Cabanossi and Cabbage

Ingredients
- 400 g whole wheat pasta (Rigatoni)
- salt
- 500 g white cabbage (0.5 white cabbage)
- 800 ml classic vegetable broth
- 4 tbsp hot mustard
- 8 tbsp white wine vinegar
- 4 tbsp rapeseed oil
- 2 tbsp pumpkin seed oil
- 3 tsp paprika powder (mild sweet)
- pepper
- 3 red bell peppers
- 2 bunches chives
- 250 g Cabanossi (whole)
Instructions
- 1. Boil water in a large pot and add plenty of salt.
- 2. Cook the pasta in it until it is al dente, exactly according to the instructions on the package.
- 3. Drain the pasta and rinse it briefly with cold water.
- 4. Let the water drain off and put the pasta into a bowl.
- 5. Let the pasta cool down in the bowl.
- 6. Wash the white cabbage under running water.
- 7. Cut the cabbage into four quarters and remove the hard core in the center.
- 8. Cut the cabbage into very thin strips.
- 9. Put the cut cabbage strips into a large salad bowl.
- 10. Heat the vegetable broth in a small pot or in the microwave.
- 11. Pour the hot broth directly over the cabbage in the bowl.
- 12. Put the mustard, the vinegar, the rapeseed oil, and the pumpkin seed oil into a small container.
- 13. Add the paprika powder and the pepper.
- 14. Stir the ingredients vigorously until a smooth sauce forms.
- 15. Pour the sauce over the warm cabbage.
- 16. Massage the cabbage with your hands so that it absorbs the sauce well.
- 17. Wash the bell peppers.
- 18. Cut the pepper into quarters and remove the inside with the seeds.
- 19. Cut the pepper pieces into very thin strips.
- 20. Wash the chives.
- 21. Shake the chives dry.
- 22. Cut the chives into small rings.
- 23. Remove the skin from the Cabanossi sausages.
- 24. Slice the Cabanossi into thin slices.
- 25. Add the pepper strips, the chives, and the cooled pasta to the cabbage.
- 26. Also add the Cabanossi slices.
- 27. Mix everything well together.
- 28. Season the salad with salt and pepper to taste.
- 29. Serve the salad now.
