🍝 Asian-style noodle salad with smoked salmon and peanuts

Ingredients
- 200 g soba noodles
- 200 g red Chinese radish
- 4 spring onions
- 200 g smoked salmon
- 0.5 bunch Thai basil
- 1 tbsp sesame oil
- 1 soy sauce
- banana leaf (for serving)
- 2 tbsp peanuts (for garnish)

Instructions
- 1. Cook the soba noodles according to the package instructions.
- 2. Rinse the noodles immediately with cold water to stop the cooking process.
- 3. Let the noodles drain well.
- 4. Wash the daikon radish thoroughly.
- 5. Remove the tough ends of the daikon radish.
- 6. Cut the daikon radish into very thin strips or use a grater.
- 7. Wash the spring onions.
- 8. Remove the dry tips of the spring onions.
- 9. Cut the spring onions into pieces about 2 centimeters long.
- 10. Cut the smoked salmon into strips about 4 centimeters long.
- 11. Carefully pluck the leaves of the Thai basil plant from the stems.
- 12. Gently mix the drained noodles with the daikon radish.
- 13. Add the spring onions to the noodle and daikon mixture.
- 14. Add the smoked salmon strips to the salad.
- 15. Drizzle soy sauce over the ingredients.
- 16. Add a little sesame oil.
- 17. Toss the ingredients gently to ensure they combine well.
- 18. Place the finished salad on banana leaves.
- 19. Sprinkle the Thai basil leaves evenly over the salad.
- 20. Garnish the dish with roasted peanuts.
- 21. Serve a little extra soy sauce in a small bowl as a dip for the salmon.
