🍝 Pasta Salad

Ingredients
- 300 g small pasta (e.g. ditali, small tubes...)
- bell peppers (1 large yellow and 1 large red)
- 1 cucumber
- 2 tbsp chives
- 1 shallot
- 5 tbsp white wine vinegar
- 0.5 tsp mustard
- salt
- pepper (from the mill)
- 0.5 tsp sugar
- 5 tbsp thistle oil
Instructions
- 1. Cook the pasta in plenty of salted water until al dente. Drain, rinse briefly with cold water, and let them drain well.
- 2. Wash the peppers, remove the stem and seeds, halve them, and cut the flesh into very small cubes. Wash the cucumber, cut off the ends, peel it, halve it lengthwise, remove the seeds with a spoon, and cut it into very small cubes as well.
- 3. Peel the shallot and cut it into fine cubes.
- 4. Whisk together vinegar, mustard, salt, pepper, and sugar. Beat in the oil with a whisk. Add the shallot and season to taste. Toss the pasta, vegetables, and chives with the marinade. Let the salad sit covered in the refrigerator for another 30 minutes.
