  1. 1. Peel the onions and cut them into quarters.
  2. 2. Gently separate the quarters into individual segments.
  3. 3. Heat the oil in a pot.
  4. 4. Sauté the onion pieces lightly in it.
  5. 5. Add the walnut kernels.
  6. 6. Sprinkle the sugar over the mixture.
  7. 7. Caramelize everything while stirring constantly.
  8. 8. Deglaze the mixture with port wine.
  9. 9. Add the vinegar.
  10. 10. Stir in the broth.
  11. 11. Season with salt and pepper.
  12. 12. Let the sauce simmer uncovered on low heat for about 15 minutes.
  13. 13. Stir occasionally.
  14. 14. Add a little water if the sauce becomes too dry.
  15. 15. Cook the tagliatelle in plenty of boiling salted water until al dente (firm to the bite).
  16. 16. Drain the pasta.
  17. 17. Toss the pasta in a pan or large pot with the onion mixture.
  18. 18. Serve the pasta on pre-warmed plates.
  19. 19. Garnish with fresh rosemary.
  20. 20. Add freshly ground pepper.
  21. 21. Crumble coarse goat cheese over the top.
