🍝 Caramelized Onion Tagliatelle with Goat Cheese

Ingredients
- 4 red onions
- 2 tbsp vegetable oil
- 40 g walnuts (coarsely chopped)
- 2 tbsp sugar
- 100 ml port wine
- 2 tbsp balsamic vinegar
- 0.5 tsp granulated broth
- salt
- pepper (from the mill)
- 400 g tagliatelle
- salt
- 1 tbsp fresh rosemary needles
- 120 g goat cheese
Instructions
- 1. Peel the onions and cut them into quarters.
- 2. Gently separate the quarters into individual segments.
- 3. Heat the oil in a pot.
- 4. Sauté the onion pieces lightly in it.
- 5. Add the walnut kernels.
- 6. Sprinkle the sugar over the mixture.
- 7. Caramelize everything while stirring constantly.
- 8. Deglaze the mixture with port wine.
- 9. Add the vinegar.
- 10. Stir in the broth.
- 11. Season with salt and pepper.
- 12. Let the sauce simmer uncovered on low heat for about 15 minutes.
- 13. Stir occasionally.
- 14. Add a little water if the sauce becomes too dry.
- 15. Cook the tagliatelle in plenty of boiling salted water until al dente (firm to the bite).
- 16. Drain the pasta.
- 17. Toss the pasta in a pan or large pot with the onion mixture.
- 18. Serve the pasta on pre-warmed plates.
- 19. Garnish with fresh rosemary.
- 20. Add freshly ground pepper.
- 21. Crumble coarse goat cheese over the top.
