🍝 Pasta with Truffle

Ingredients
- 350 g ribbon pasta
- 50 g fresh black truffles
- 80 g butter
- salt
- pepper (from the mill)
- 40 g freshly grated parmesan
- 2 tbsp chopped spring onions
Instructions
- 1. Cook the pasta in plenty of salted water until al dente.
- 2. Thoroughly clean the truffles with a brush and slice them into thin strips. Finely chop half of these strips.
- 3. Drain the pasta, but reserve half a cup of the cooking water.
- 4. Mix the pasta with butter, the chopped truffles, and the pasta water. Season everything with salt and pepper.
- 5. Serve the pasta immediately on pre-warmed plates. Garnish with the truffle strips and spring onions.
