  1. 1. Cook the pasta in plenty of salted water until al dente.
  2. 2. Thoroughly clean the truffles with a brush and slice them into thin strips. Finely chop half of these strips.
  3. 3. Drain the pasta, but reserve half a cup of the cooking water.
  4. 4. Mix the pasta with butter, the chopped truffles, and the pasta water. Season everything with salt and pepper.
  5. 5. Serve the pasta immediately on pre-warmed plates. Garnish with the truffle strips and spring onions.
