🍝 Classic Pasta with Fresh Tomato Sauce

Ingredients
- 400 g red spiral pasta
- 1 can crushed tomatoes
- 2 garlic cloves (peeled)
- 1 onion (finely chopped)
- olive oil
- salt
- pepper (from the mill)
- sugar
- freshly grated nutmeg
- butter
Instructions
- 1. Heat 3 tablespoons of olive oil in a large pan.
- 2. Add the chopped onion and sauté until soft and translucent.
- 3. Add the chopped tomatoes, 2 teaspoons of sugar, and the pressed garlic to the pan.
- 4. Bring the mixture to a boil.
- 5. Reduce the heat to a low setting.
- 6. Cover the pan and let the sauce simmer for 10 to 15 minutes.
- 7. Season the sauce with salt, pepper, and a pinch of grated nutmeg.
- 8. Cook the pasta in a large pot with plenty of salted water until al dente (firm to the bite).
- 9. Drain the pasta water, but reserve 1 cup of it for later.
- 10. Return the drained pasta to the pot.
- 11. Add 2 teaspoons of butter and 4 tablespoons of the reserved pasta water.
- 12. Toss everything well until the pasta is glossy and creamy.
- 13. Divide the pasta among the plates.
- 14. Pour the warm tomato sauce over the pasta.
- 15. Serve the dish immediately, optionally with freshly grated Parmesan or Parmesan shavings.
