🍝 Homemade Pasta with Fresh Tomato Sauce

Ingredients
- 400 g Spaghetti
- 1 Onion
- 2 Garlic cloves
- 2 tsp Oil
- 500 g Tomatoes
- 1 bunch Basil
- 0.5 bunch Oregano
- 50 g grated Parmesan
- Salt
- Pepper
Instructions
- 1. Peel the onion and the garlic clove. Chop both ingredients very finely. Heat some oil in a pan and sauté the onion-garlic mixture in it until fragrant.
- 2. Wash the tomatoes. Cut them into coarse cubes. Add the tomato cubes to the onion mixture in the pan.
- 3. Finely chop the basil and oregano. Set aside half of the chopped herbs.
- 4. Stir the other half of the herbs into the tomato sauce. Season the sauce generously with salt and pepper.
- 5. Let the sauce simmer on low heat for one hour. This means it should only bubble very gently.
- 6. Strain the finished sauce through a fine sieve (e.g., a fine mesh strainer) to remove solid components like onion pieces and tomato skin. This will give you a smooth sauce.
- 7. Cook the pasta in salted water, exactly as stated on the package. Pay attention to the specified cooking time.
- 8. Reheat the strained sauce in a pot.
- 9. Add the remaining half of the chopped herbs to the warm sauce and stir them in.
- 10. Place the drained pasta on the plates. Pour the tomato sauce over it. Sprinkle the dish with grated Parmesan cheese.
