  1. 1. Wash the spring onions thoroughly.
  2. 2. Remove the dry ends from the onions.
  3. 3. Slice the white and light green parts of the spring onions into thin rings.
  4. 4. Set aside a small portion of the green parts for garnish.
  5. 5. Open the can of tuna and drain the water or oil.
  6. 6. Pour the oil into a large pan and heat it over medium heat.
  7. 7. Add the sliced spring onion rings to the hot pan.
  8. 8. Sauté the onions briefly until they become soft.
  9. 9. Take the tuna out of the can and crumble it with your fingers directly into the pan.
  10. 10. Simmer the tuna together with the onions for a few minutes.
  11. 11. Stir the cream into the pan.
  12. 12. Add the lemon juice.
  13. 13. Let the sauce come to a brief boil.
  14. 14. Blend the sauce with a hand blender until it is smooth and creamy.
  15. 15. Season the sauce with salt to taste.
  16. 16. Season the sauce with freshly ground pepper.
  17. 17. Stir the horseradish into the sauce.
  18. 18. Taste the sauce one last time and adjust the spices if necessary.
