🍝 Creamy Tuna Pasta with Lemon and Horseradish

Ingredients
- 300 g Farfalle
- 0.5 bunch Spring onions
- 1 can Tuna (natural, approx. 130 g drained weight)
- 2 tbsp Olive oil
- 150 g Whipping cream
- 2 tbsp Lemon juice
- Salt
- Pepper (from the mill)
- 1 tsp Grated horseradish (fresh or jarred)
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Remove the dry ends from the onions.
- 3. Slice the white and light green parts of the spring onions into thin rings.
- 4. Set aside a small portion of the green parts for garnish.
- 5. Open the can of tuna and drain the water or oil.
- 6. Pour the oil into a large pan and heat it over medium heat.
- 7. Add the sliced spring onion rings to the hot pan.
- 8. Sauté the onions briefly until they become soft.
- 9. Take the tuna out of the can and crumble it with your fingers directly into the pan.
- 10. Simmer the tuna together with the onions for a few minutes.
- 11. Stir the cream into the pan.
- 12. Add the lemon juice.
- 13. Let the sauce come to a brief boil.
- 14. Blend the sauce with a hand blender until it is smooth and creamy.
- 15. Season the sauce with salt to taste.
- 16. Season the sauce with freshly ground pepper.
- 17. Stir the horseradish into the sauce.
- 18. Taste the sauce one last time and adjust the spices if necessary.
- 19. Bring a large pot of water to a boil.
- 20. Add a good amount of salt to the boiling water.
- 21. Add the pasta to the salted water.
- 22. Cook the pasta until it is al dente (firm to the bite).
- 23. Slice the reserved green part of the spring onions into very fine ribbons.
- 24. Drain the pasta in a colander.
- 25. Let the pasta drain well.
- 26. Add the drained pasta directly into the pan with the tuna sauce.
- 27. Mix the pasta well with the sauce so that everything is evenly coated.
- 28. Warm the serving plates in the oven or with hot water.
- 29. Plate the pasta onto the warmed plates.
- 30. Sprinkle the fine spring onion ribbons over the finished pasta as a garnish.
