  2. 2. Remove the thick stems from the leafy greens.
  3. 3. Place the damp spinach into a pot.
  4. 4. Heat the pot on medium until the spinach has wilted.
  5. 5. Remove the spinach from the pot and set it aside.
  6. 6. Peel the shallots.
  7. 7. Finely chop the shallots.
  8. 8. Melt the butter in a pot.
  9. 9. Sauté the chopped shallots and garlic in the butter.
  10. 10. Add the prepared spinach back into the pot.
  11. 11. Sauté the mixture for two more minutes.
  12. 12. Cook the pasta in salted water according to package instructions until al dente.
  13. 13. Drain the pasta.
  14. 14. Heat the cream in a small pot.
  15. 15. Season the cream with salt, nutmeg, and pepper.
  16. 16. Divide the pasta among the plates.
  17. 17. Place the spinach on top of the pasta.
  18. 18. Pour the warm cream sauce over everything.
  19. 19. Roughly chop the walnuts.
  20. 20. Sprinkle the walnuts over the dish.
  21. 21. Finally, season the dish again with salt and freshly ground pepper.
