  1. 1. Bring a large pot of salted water to a boil.
  2. 2. Add the penne pasta to the boiling water.
  3. 3. Cook the pasta for 15 to 20 minutes until al dente.
  4. 4. Thoroughly wash the spinach under running water.
  5. 5. Spin the spinach dry or pat it with a kitchen towel.
  6. 6. Peel the shallot and the garlic.
  7. 7. Cut the shallot into very small cubes.
  8. 8. Slice the garlic into thin slices.
  9. 9. Heat the oil in a large pan.
  10. 10. Fry the garlic slices until golden yellow.
  11. 11. Add the diced shallot to the pan.
  12. 12. Add the dry spinach.
  13. 13. Sauté the vegetables until the spinach has wilted slightly.
  14. 14. Deglaze the mixture with white wine.
  15. 15. Stir in the cream.
  16. 16. Let the sauce simmer for approx. 5 minutes over medium heat.
  17. 17. Season the sauce with salt, pepper, and nutmeg.
  18. 18. Drain the cooked pasta.
  19. 19. Toss the pasta into the spinach sauce.
  20. 20. Toss the pan briefly to mix everything well.
  21. 21. Remove the pan from the heat.
  22. 22. Warm the serving plates.
  23. 23. Plate the pasta onto the warmed plates.
  24. 24. Sprinkle the portions with cottage cheese.
  25. 25. Serve the dish immediately.
