🍝 Penne with Creamy Spinach and Fresh Cheese Sauce

Ingredients
- 400 g Penne
- salt
- 600 g fresh spinach leaves
- 2 garlic cloves
- 1 shallot
- 2 tbsp olive oil
- 50 ml dry white wine
- 250 ml whipping cream (at least 30% fat content)
- pepper (from the mill)
- nutmeg
- 200 g cottage cheese
Instructions
- 1. Bring a large pot of salted water to a boil.
- 2. Add the penne pasta to the boiling water.
- 3. Cook the pasta for 15 to 20 minutes until al dente.
- 4. Thoroughly wash the spinach under running water.
- 5. Spin the spinach dry or pat it with a kitchen towel.
- 6. Peel the shallot and the garlic.
- 7. Cut the shallot into very small cubes.
- 8. Slice the garlic into thin slices.
- 9. Heat the oil in a large pan.
- 10. Fry the garlic slices until golden yellow.
- 11. Add the diced shallot to the pan.
- 12. Add the dry spinach.
- 13. Sauté the vegetables until the spinach has wilted slightly.
- 14. Deglaze the mixture with white wine.
- 15. Stir in the cream.
- 16. Let the sauce simmer for approx. 5 minutes over medium heat.
- 17. Season the sauce with salt, pepper, and nutmeg.
- 18. Drain the cooked pasta.
- 19. Toss the pasta into the spinach sauce.
- 20. Toss the pan briefly to mix everything well.
- 21. Remove the pan from the heat.
- 22. Warm the serving plates.
- 23. Plate the pasta onto the warmed plates.
- 24. Sprinkle the portions with cottage cheese.
- 25. Serve the dish immediately.
