🍝 Asparagus Penne

Ingredients
- 300 g green asparagus (the lower third peeled, ends trimmed and cut into small pieces)
- 6 tbsp olive oil
- 2 tbsp lemon juice
- 2 tbsp pine nuts
- salt
- pepper (from the mill)
- 200 g penne
Instructions
- 1. Place the asparagus in boiling salted water and cook for about 8 minutes. Then remove it and let the water drain off.
- 2. Cook the pasta for as long as stated on the package until it is firm to the bite. Drain it, rinse it briefly with cold water, and let it drain as well.
- 3. Toast the pine nuts in a pan without additional fat over medium heat. Then remove them from the pan and set them aside.
- 4. Heat the oil in a pan, toss the asparagus in it briefly, and season it well with salt, pepper, and lemon juice. Fold in the penne, let it warm up briefly, and serve on plates sprinkled with the pine nuts.
