🍝 Spicy 'All'Arrabbiata' Pasta

Ingredients
- 400 g Penne
- salt
- 500 g ripe tomatoes
- 2 red chili peppers
- 1 red onion
- 2 garlic cloves
- 80 g smoked bacon cubes
- 2 tbsp olive oil
- 150 ml vegetable broth
- pepper (from the mill)
- 0.5 bunch basil
Instructions
- 1. Boil water in a large pot and add salt. Cook the pasta in it until it is al dente (firm to the bite).
- 2. Pour boiling water over the tomatoes. Peel off the skin. Cut the tomatoes into quarters and remove the seeds. Dice the flesh into small cubes.
- 3. Wash the chili pepper. Slice it into thin rings.
- 4. Peel the onion and the garlic. Dice the onion and slice the garlic thinly.
- 5. Heat oil in a large pan. Fry the bacon until crispy.
- 6. Add the diced onion, garlic slices, and chili rings to the pan. Sauté them briefly.
- 7. Stir in the diced tomatoes. Top up the pan with some cooking water or broth.
- 8. Season the sauce with salt and pepper. Let it simmer on medium heat for 15 minutes.
- 9. Wash the basil and shake it dry. Pluck the leaves off the stems.
- 10. Fry the basil leaves briefly in hot oil until crispy. Set them aside.
- 11. Drain the pasta. Add it directly to the pan with the tomato sauce.
- 12. Toss the pasta briefly in the sauce to distribute it evenly.
- 13. Fill the pasta into pre-warmed bowls.
- 14. Sprinkle the pasta with the fried basil leaves. Serve immediately.
