🍝 Pasta with Red Mullet

Ingredients
- 500 g Spaghetti
- Salt
- 500 g Red Mullet Fillet
- 4 Spring Onions
- 1 Garlic Clove
- 2 cm fresh Ginger
- Pepper (from the mill)
- 1 tbsp Vegetable Oil
- 1 tsp Turmeric (ground)
- 100 ml dry White Wine
- 150 ml Fish Stock
- 100 ml Whipping Cream
- Pepper (from the mill)
- Dill Tips (for garnish)
Instructions
- 1. Cook the pasta in salted water until al dente.
- 2. Rinse the red mullet fillets and pat them dry.
- 3. Cut about two-thirds of the fillets into strips.
- 4. Finely chop the remaining fish.
- 5. Peel the spring onions, garlic, and ginger.
- 6. Finely chop the spring onions, garlic, and ginger.
- 7. Season the fish strips with salt and pepper.
- 8. Fry the fish strips in hot oil in a non-stick pan on both sides.
- 9. Remove the fried fish strips from the pan.
- 10. Sauté the spring onions, garlic, and ginger in the remaining oil until translucent.
- 11. Add the chopped fish and turmeric.
- 12. Sauté the mixture briefly.
- 13. Deglaze the pan with wine.
- 14. Let the sauce simmer briefly.
- 15. Add the fish stock and cream.
- 16. Serve the pasta garnished with dill.
