🍝 Pasta with Carrot Cream Sauce

Ingredients
- 4 Carrots
- 2 tbsp Olive oil
- 4 Garlic cloves
- 250 g Whipping cream
- Salt
- Pepper (from the mill)
- Nutmeg
- 1 tbsp Lemon juice
- 350 g Spaghetti
- 50 g freshly grated Parmesan
Instructions
- 1. Peel the carrots, wash them, and grate them finely. Also peel the garlic cloves.
- 2. Heat the olive oil in a large pot and press the garlic directly into it.
- 3. Add the grated carrots and sauté everything for about 5 minutes. Then pour in the cream and let the mixture simmer for another 5 minutes. Finally, season with salt, pepper, nutmeg, and a splash of lemon juice.
- 4. Meanwhile, cook the pasta in plenty of boiling salted water until al dente (firm to the bite). Then drain them and let them drip dry.
- 5. Stir the grated Parmesan into the carrot sauce, mix everything with the spaghetti, and serve the pasta on plates.
