  1. 1. Peel the carrots, wash them, and grate them finely. Also peel the garlic cloves.
  2. 2. Heat the olive oil in a large pot and press the garlic directly into it.
  3. 3. Add the grated carrots and sauté everything for about 5 minutes. Then pour in the cream and let the mixture simmer for another 5 minutes. Finally, season with salt, pepper, nutmeg, and a splash of lemon juice.
  4. 4. Meanwhile, cook the pasta in plenty of boiling salted water until al dente (firm to the bite). Then drain them and let them drip dry.
  5. 5. Stir the grated Parmesan into the carrot sauce, mix everything with the spaghetti, and serve the pasta on plates.
