Ingredients
- 400 g Spaghettini
- 1 kg Mussels (cleaned, discard open ones)
- 3 Garlic cloves
- 3 Shallots
- 150 g Snow peas
- 1 tbsp Butter
- 1 pinch Saffron threads
- Tabasco
- Salt
- Pepper
- 3 tbsp Olive oil
- 150 ml White wine
- 4 tbsp Lemon juice
Instructions
- 1. Boil plenty of salted water. Cook the spaghetti al dente (still firm to the bite), drain them and let them drip dry.
- 2. Sauté the garlic in oil in a large pot. Add the mussels, pour in the wine and lemon juice. Cook everything on high heat with the lid on for about 5 minutes until the mussels open.
- 3. Strain the cooking liquid, bring it back to a boil and season with salt, pepper and a few drops of Tabasco. Stir in the saffron.
- 4. Wash the snow peas and remove the ends. Cook them for about 4 minutes in boiling salted water, drain them and let them drip dry.
- 5. Peel the shallots and slice them. Fry them in hot butter in a pan. Add them together with the snow peas to the seasoned sauce.
- 6. Warm the mussels and spaghetti in the sauce and serve the dish.
