🍝 Creamy Spaghetti with Salmon and Radishes

Ingredients
- 2 herbs (e.g. parsley, chervil, dill)
- 4 radishes
- 1 shallot
- 1 tbsp rapeseed oil
- 200 ml whipping cream
- 200 ml vegetable broth
- 500 g spaghetti
- salt
- 1 tbsp cornstarch (optional)
- pepper (from the mill)
- lemon juice
- 200 g smoked salmon (sliced)
Instructions
- 1. Rinse the herbs under running water and chop them finely.
- 2. Wash the radishes, remove the stems, and slice them into very thin rounds.
- 3. Dice the shallot very finely.
- 4. Heat the oil in a pan and sauté the shallot until translucent.
- 5. Pour the cream and the broth into the pan with the shallot.
- 6. Add the radish slices to the sauce.
- 7. Let the sauce simmer on low heat for about 10 minutes.
- 8. Cook the spaghetti in a pot of boiling salted water until al dente.
- 9. Mix the starch with a little cold water until you have a smooth mixture.
- 10. Stir the starch mixture into the sauce to thicken it.
- 11. Fold the chopped herbs into the sauce.
- 12. Remove the pan from the heat.
- 13. Season the sauce to taste with salt, pepper, and lemon juice.
- 14. Break the salmon into small pieces.
- 15. Toss the drained spaghetti with the sauce and the salmon.
- 16. Serve the dish on pre-warmed plates.
