🍝 Pasta with fresh herb sauce

Ingredients
- 40 g cashew nuts
- 500 g spaghetti
- salt
- 1 clove of garlic
- 2 handfuls cilantro leaves
- 6 tbsp sesame oil (mild)
- 2 tbsp freshly grated parmesan
- 1 splash lemon juice
- pepper (from the mill)

Instructions
- 1. Toast the cashew nuts briefly in a hot pan and then let them cool down.
- 2. Cook the pasta in salted water until al dente (firm to the bite).
- 3. Peel the garlic. Rinse the cilantro leaves, shake off excess water, and blend them together with the garlic, the cooled nuts, the oil, the grated Parmesan, and a splash of pasta cooking water into a creamy sauce. Season the sauce with lemon juice, salt, and pepper.
- 4. Drain the pasta and let it drain well. Divide the pasta among plates, top with the sauce, and grate some fresh Parmesan over it. Serve the dish garnished with fresh cilantro leaves.
