🍝 Classic Pasta with Meat and Tomato Sauce

Ingredients
- 8 tomatoes
- 1 onion
- 1 clove garlic
- 2 tbsp olive oil
- 500 g minced meat (beef)
- 1 tbsp tomato paste
- 250 ml strong meat broth
- salt
- 1 pinch sugar
- pepper (from the mill)
- 500 g maccheroni
- freshly cut basil
- freshly grated parmesan
Instructions
- 1. Pour boiling water over the tomatoes.
- 2. Shock the tomatoes immediately with cold water.
- 3. Peel the skin off the tomatoes.
- 4. Quarter the tomatoes and remove the core.
- 5. Dice the tomatoes into small cubes.
- 6. Peel the onion and the garlic.
- 7. Chop the onion and garlic very finely.
- 8. Heat oil in a pot.
- 9. Fry the minced meat until crumbly, stirring occasionally.
- 10. Brown the meat slightly.
- 11. Add the diced onion and garlic to the meat.
- 12. Sauté the vegetables for 2 to 3 minutes.
- 13. Stir the tomato paste into the meat mixture.
- 14. Pour in the meat broth.
- 15. Season the sauce with salt, sugar, and pepper.
- 16. Stir the diced tomatoes into the sauce.
- 17. Let the sauce simmer for about 45 minutes with the lid slightly ajar.
- 18. Stir the sauce occasionally while cooking.
- 19. Add more broth if necessary.
- 20. Cook the macaroni in salted water al dente.
- 21. Taste the sauce one last time and adjust seasoning.
- 22. Add the drained pasta to the sauce.
- 23. Toss the pasta well in the sauce.
- 24. Fill the bowls with the pasta.
- 25. Sprinkle the pasta with fresh basil.
- 26. Grate Parmesan cheese over the top if desired.
