🍝 Pasta with Green Asparagus

Ingredients
- 500 g green asparagus
- salt
- 1 bunch spring onions
- 1 clove garlic
- 2 tomatoes
- 2 tbsp sesame seeds
- 6 tbsp olive oil (60 ml each)
- pepper (from a grinder)
- 400 g short macaroni
- 100 g Parma ham
- basil
Instructions
- 1. Thoroughly wash the green asparagus.
- 2. Trim off the woody ends generously.
- 3. Cut the asparagus into bite-sized pieces.
- 4. Bring a pot of salted water to a boil.
- 5. Cook the asparagus in it for 6 to 8 minutes.
- 6. Drain the asparagus.
- 7. Shock it immediately with cold water.
- 8. Clean the spring onions.
- 9. Wash them as well.
- 10. Slice the spring onions into thin rings.
- 11. Peel the garlic.
- 12. Dice the garlic finely.
- 13. Wash the tomatoes.
- 14. Quarter the tomatoes.
- 15. Remove the core.
- 16. Cut the flesh into cubes.
- 17. Heat a dry pan over low heat.
- 18. Toast the sesame seeds in it briefly.
- 19. Pour the sesame seeds onto a plate.
- 20. Let the sesame seeds cool down completely.
- 21. Heat olive oil in a different pan.
- 22. Sear the asparagus pieces briefly over medium heat.
- 23. Add the spring onion rings to the pan.
- 24. Add the tomato cubes.
- 25. Sauté the vegetables for 2 to 3 minutes.
- 26. Season the mixture with salt and pepper.
- 27. Bring a large pot of salted water to a boil.
- 28. Cook the pasta in it until al dente.
- 29. Roll the ham into small rolls.
- 30. Slice the ham rolls.
- 31. Drain the pasta.
- 32. Let the pasta drain well.
- 33. Mix the pasta with the asparagus vegetables.
- 34. Sprinkle the cooled sesame seeds over it.
- 35. Gently fold in the ham rolls.
- 36. Rinse the basil briefly.
- 37. Shake it dry.
- 38. Pluck the leaves from the stems.
- 39. Sprinkle the basil over the finished dish.
- 40. Serve the pasta with green asparagus.
