  1. 1. Bring plenty of water to a boil and add salt.
  2. 2. Cook the noodles in it until they are al dente (still firm to the bite).
  3. 3. Drain the noodles and let them drip dry well.
  4. 4. Wash the leek and trim off the ends.
  5. 5. Slice the white and light green parts of the leek into thin rings.
  6. 6. Peel the shallots and the garlic.
  7. 7. Dice the shallots and the garlic finely.
  8. 8. Heat oil in a wok or a frying pan.
  9. 9. Sauté the shallots, garlic, and leek in the hot oil for 3 minutes.
  10. 10. Add the drained noodles.
  11. 11. Fry the noodles for another 5 minutes.
  12. 12. Season with soy sauce, salt, and pepper.
  13. 13. Add walnut oil and stir everything together.
  14. 14. Stir in the chives.
  15. 15. Divide the noodles among small bowls.
  16. 16. Sprinkle the noodles with walnuts.
  17. 17. Serve the noodles immediately.
