🍝 Pasta with Vegetable Stir-fry

Ingredients
- 400 g Linguine
- Olive oil (cold-pressed)
- Salt
- Pepper (from the mill)
- 3 bell peppers (2 red, 1 yellow)
- 1 small broccoli
- 3 garlic cloves (finely chopped)
- 1 zucchini
- Parmesan
Instructions
- 1. Wash the peppers thoroughly.
- 2. Cut the peppers in half.
- 3. Remove the inside with the seeds and the stem.
- 4. Cut the pepper halves lengthwise into thin strips.
- 5. Wash the broccoli.
- 6. Divide the broccoli into small florets.
- 7. Boil the broccoli florets for 4 minutes in boiling salted water.
- 8. Drain the broccoli well afterwards.
- 9. Wash the zucchini.
- 10. Cut the zucchini lengthwise into quarters.
- 11. Cut the zucchini quarters into small cubes.
- 12. Heat 4 tablespoons of oil in a pan.
- 13. Briefly fry the peppers and the zucchini over high heat for 1 minute.
- 14. Reduce the heat.
- 15. Add 50 milliliters of water and the garlic.
- 16. Simmer the vegetables under a lid over medium heat for about 8 to 10 minutes.
- 17. Stir the vegetables occasionally.
- 18. Add the broccoli.
- 19. Season the vegetables with salt and pepper to taste.
- 20. Cook the pasta in plenty of salted water until al dente.
- 21. Check the cooking time by tasting a pasta piece repeatedly.
- 22. Mix the pasta with the vegetables.
- 23. Add a little more pepper.
- 24. Sprinkle the pasta with freshly grated Parmesan.
- 25. Serve the pasta immediately.
