🍝 Vegetable Pasta with Cheese

Ingredients
- 250 g Tagliatelle
- Salt
- Pepper (from the mill)
- 2 Onions
- 50 g Snow peas
- 100 g Broccoli florets
- 2 tbsp Olive oil
- 50 ml Vegetable broth
- 2 tbsp Parmesan
Instructions
- 1. Bring a large pot of water to a boil and add some salt.
- 2. Cook the pasta in this salted water until it is al dente (still firm to the bite).
- 3. Peel the onions and cut them in half lengthwise.
- 4. Cut the onion halves into very thin strips.
- 5. Remove the hard ends and strings from the snow peas.
- 6. Thoroughly wash the snow peas and the broccoli.
- 7. Cut the washed broccoli into small florets.
- 8. Cut the snow peas into small pieces.
- 9. Add some oil to a pan and heat it.
- 10. Add the onion strips, snow peas, and broccoli to the hot pan.
- 11. Sauté the vegetables for 5 minutes over medium heat.
- 12. Deglaze the vegetables with a little vegetable broth.
- 13. Let the liquid reduce slightly until it thickens a bit.
- 14. Season the vegetables with salt and pepper to taste.
- 15. Drain the cooked pasta in a colander.
- 16. Let the pasta drain well.
- 17. Mix the drained pasta with the sautéed vegetables in the pan.
- 18. Portion the pasta and vegetable mixture onto plates.
- 19. Sprinkle the dish freshly with grated Parmesan cheese.
- 20. Serve the pasta immediately while warm.
