🍝 Noodles with fried vegetables

Ingredients
- 250 g glass noodles
- 200 g carrots
- 2 thin stalks leek
- 100 g bamboo shoots (can)
- 1 large red bell pepper
- 4 red cabbage leaves
- 3 tbsp oil
- 150 ml vegetable broth
- salt
- pepper (from the mill)
Instructions
- 1. Peel the carrots and cut them into thin sticks.
- 2. Wash the leek, trim the ends, and slice the white and light green parts into rings.
- 3. Drain the bamboo shoots and slice them into strips. Wash the bell pepper, halve it, remove the seeds and white pith, and cut into small pieces. Wash the red cabbage, pat dry, and slice into thin strips.
- 4. Place the noodles in a bowl, pour boiling water over them, and let them sit for five minutes.
- 5. Fry the vegetables in hot oil, season with salt and pepper, add a little cooking water, and simmer for another four to five minutes. Remove the noodles from the water, drain them, and divide them among small plates. Top with the vegetables and serve hot.
