🍝 Spaghetti with Fried Tuna Meatballs

Ingredients
- 500 g tuna fillet
- 1 untreated lemon (zest and juice)
- 1 egg yolk
- 2 tbsp freshly chopped herbs (thyme and rosemary)
- 80 g breadcrumbs
- salt
- pepper (from the mill)
- 6 tomatoes
- 1 onion
- 1 clove of garlic
- 3 tbsp olive oil
- 100 ml red wine
- 400 g spaghetti
- 1 pinch sugar
- 50 g grated parmesan
- 1 handful arugula
Instructions
- 1. Rinse the tuna under cold water and pat it dry with a kitchen towel.
- 2. Finely chop the tuna.
- 3. Place the chopped tuna in a bowl.
- 4. Grate some lemon zest over the mixture.
- 5. Add a splash of lemon juice.
- 6. Add the egg yolk to the bowl.
- 7. Add the chopped herbs.
- 8. Mix all ingredients thoroughly with a spoon.
- 9. Add breadcrumbs gradually until the mixture is moldable.
- 10. Season the mixture with salt and pepper.
- 11. Form small balls from the tuna mixture.
- 12. Roll the balls in the remaining breadcrumbs.
- 13. Blanch the tomatoes with boiling water.
- 14. Shock the tomatoes with cold water.
- 15. Peel the skin off the tomatoes.
- 16. Cut the tomatoes into quarters.
- 17. Remove the seeds from the tomatoes.
- 18. Dice the tomatoes into small pieces.
- 19. Peel the onion.
- 20. Peel the garlic clove.
- 21. Finely dice the onion.
- 22. Finely dice the garlic.
- 23. Heat one tablespoon of oil in a pot.
- 24. Add the onion and garlic to the hot oil.
- 25. Sauté the vegetables until translucent.
- 26. Deglaze the vegetables with wine.
- 27. Add the diced tomatoes to the pot.
- 28. Let the sauce simmer for about 10 minutes.
- 29. Bring water to a boil in a pasta pot and salt it.
- 30. Cook the pasta al dente.
- 31. Heat some oil in a frying pan.
- 32. Fry the tuna balls until golden brown on all sides.
- 33. Fry the balls for about 5 to 6 minutes.
- 34. Season the tomato sauce with lemon juice.
- 35. Add a little sugar to the sauce.
- 36. Season the sauce with salt and pepper.
- 37. Add the drained pasta to the sauce.
- 38. Toss the pasta in the sauce.
- 39. Divide the pasta onto plates.
- 40. Place the tuna balls alongside.
- 41. Sprinkle grated Parmesan over it.
- 42. Garnish with washed arugula.
- 43. Serve the dish.
