  1. 1. Shake the morels vigorously to remove loose stones and dirt.
  2. 2. Clean the outside of the morels carefully with a small brush.
  3. 3. Peel the shallots and the garlic.
  4. 4. Dice the shallots and garlic finely.
  5. 5. Bring a large pot of water to a boil and add salt.
  6. 6. Cook the maccheroni in the boiling salted water until al dente (firm to the bite).
  7. 7. Add the fava beans to the pasta during the last three to four minutes of cooking time.
  8. 8. Drain the pasta and beans and let them drain well.
  9. 9. Heat the oil in a large pan.
  10. 10. Lightly fry the diced shallots and garlic.
  11. 11. Add the morels to the pan and fry them for three to four minutes.
  12. 12. Pour the broth into the pan.
  13. 13. Season the mixture with pepper, saffron, and piment.
  14. 14. Return the drained beans and pasta to the pan.
  15. 15. Toss everything briefly to combine.
  16. 16. Add the cheese.
  17. 17. Season the dish with salt and pepper to taste.
  18. 18. Cut the chives into large pieces.
  19. 19. Fold the chives into the pasta.
  20. 20. Serve the dish immediately.
