🍝 Creative Pasta with Beans and Mushrooms

Ingredients
- 200 g Morel
- 2 Shallots
- 1 Garlic clove
- 400 g Maccheroni
- Salt
- 200 g dried Fava bean (Broad beans)
- 3 tbsp Olive oil
- 150 ml Vegetable broth
- Pepper
- 1 pinch Saffron
- Pimento (ground)
- 4 tbsp grated hard cheese (e.g. Pecorino)
- 0.5 handful Chives
Instructions
- 1. Shake the morels vigorously to remove loose stones and dirt.
- 2. Clean the outside of the morels carefully with a small brush.
- 3. Peel the shallots and the garlic.
- 4. Dice the shallots and garlic finely.
- 5. Bring a large pot of water to a boil and add salt.
- 6. Cook the maccheroni in the boiling salted water until al dente (firm to the bite).
- 7. Add the fava beans to the pasta during the last three to four minutes of cooking time.
- 8. Drain the pasta and beans and let them drain well.
- 9. Heat the oil in a large pan.
- 10. Lightly fry the diced shallots and garlic.
- 11. Add the morels to the pan and fry them for three to four minutes.
- 12. Pour the broth into the pan.
- 13. Season the mixture with pepper, saffron, and piment.
- 14. Return the drained beans and pasta to the pan.
- 15. Toss everything briefly to combine.
- 16. Add the cheese.
- 17. Season the dish with salt and pepper to taste.
- 18. Cut the chives into large pieces.
- 19. Fold the chives into the pasta.
- 20. Serve the dish immediately.
