🍝 Pasta with Leaf Spinach, Sheep's Cheese, and Bacon

Ingredients
- 400 g Bowtie
- Salt
- 300 g Spinach
- 2 Shallots
- 1 red Chili Pepper
- 150 g Bacon (in slices)
- 2 tbsp Olive Oil
- 150 g Feta
Instructions
- 1. Bring water to a boil and salt it generously.
- 2. Cook the bow-tie pasta in this water until al dente (firm to the bite).
- 3. Thoroughly wash the leaf spinach.
- 4. Remove any thick stems and let the spinach drain well.
- 5. Peel the shallot.
- 6. Halve the shallot and slice it into thin strips.
- 7. Wash the chili pepper.
- 8. Remove the stem and finely chop the chili.
- 9. Cut the bacon into small pieces.
- 10. Heat oil in a frying pan.
- 11. Fry the bacon slowly in the hot oil until crispy.
- 12. Remove the bacon from the pan and set it aside.
- 13. Sauté the shallot strips in the remaining bacon fat until golden brown.
- 14. Add the chopped chili and sweat it briefly.
- 15. Add the drained spinach to the pan.
- 16. Let the spinach wilt.
- 17. Add the drained pasta to the pan.
- 18. Toss everything together, adding a little pasta water if necessary.
- 19. Crumble the sheep's cheese (feta) over the top.
- 20. Season the dish with salt and pepper.
- 21. Fill the pasta into bowls.
- 22. Serve the dish immediately.
