🍝 Creative Pasta Pan with Artichokes and Shrimp

Ingredients
- 12 very small artichokes
- 200 g Scampi (kitchen-ready or shrimp)
- 1 tbsp parsley (finely chopped)
- 2 garlic cloves
- 1 shallot
- 1 untreated lemon (some zest)
- 250 g spaghetti
- 2 tbsp sweet cream butter
- red peppercorns
- 150 ml dry white wine
- 2 tbsp olive oil
- black pepper (from the mill)
- salt
Instructions
- 1. Rinse the artichokes under running water.
- 2. Remove the tough stems and the lower, fibrous leaves.
- 3. Fill a pot with two liters of water.
- 4. Add a small piece of lemon to the water.
- 5. Bring the water to a boil.
- 6. Place the prepared artichokes into the pot.
- 7. Cover the pot with a lid.
- 8. Let the artichokes simmer gently for about twelve minutes.
- 9. Remove the artichokes from the pot.
- 10. Let the artichokes drain.
- 11. Let the artichokes cool down completely.
- 12. Slice the artichokes lengthwise into thin wedges.
- 13. Peel the garlic.
- 14. Peel the shallots.
- 15. Dice the garlic into small cubes.
- 16. Dice the shallots into small cubes.
- 17. Cook the pasta in the water previously used for the artichokes.
- 18. Cook the pasta until al dente (firm to the bite).
- 19. Drain the pasta.
- 20. Reserve some of the pasta cooking water in a container.
- 21. Place the pasta in the oven.
- 22. Set the oven to seventy degrees.
- 23. Keep the pasta warm in the oven.
- 24. Place the artichoke wedges in a frying pan.
- 25. Add the butter to the pan.
- 26. Fry the artichokes vigorously.
- 27. Add the scampi (shrimp) to the pan.
- 28. Add the diced shallots to the pan.
- 29. Add the red pepper to the pan.
- 30. Add the garlic to the pan.
- 31. Let the ingredients sweat briefly.
- 32. Deglaze the pan with a little white wine.
- 33. Pour the reserved pasta water into the pan.
- 34. Stir the olive oil into the pan.
- 35. Stir the parsley into the pan.
- 36. Remove the pan from the heat.
- 37. Fold in the warm pasta immediately.
- 38. Season the dish to taste with pepper.
- 39. Season the dish to taste with salt.
