🍝 Wok Noodles with Meat and Mushrooms

Ingredients
- 300 g Asian egg noodles
- 200 g raw pork belly
- 1 tbsp vegetable oil
- 500 ml beef broth (from a jar)
- 200 g shiitake mushrooms
- 1 bunch spring onions
- 2 tbsp dark soy sauce
Instructions
- 1. Cook the noodles in boiling water for 4 minutes, drain them, rinse them with cold water and let them drain well. Wash the meat, pat it dry and slice it into thin slices. Heat the oil in a pot and fry the pork briefly.
- 2. Wash the spring onions, cut off the ends, cut the white part into thin rings, cut the green part into coarse rings and set aside. Add the white onion rings to the meat, fry them briefly, pour in the beef broth and simmer over low heat for 20 minutes.
- 3. Clean the mushrooms, slice them thinly, add them to the broth and simmer for a further 10 minutes. Add the noodles to the broth, warm them, season with soy sauce, fill them into bowls and garnish with spring onion greens.
