  1. 1. Cut the Gorgonzola and mozzarella into small cubes.
  2. 2. Preheat the oven to 200 degrees.
  3. 3. Cook the fusilli in plenty of salted water until firm to the bite (al dente).
  4. 4. Drain the noodles.
  5. 5. Mix the noodles with the Gorgonzola and mozzarella.
  6. 6. Season the mixture with salt, pepper, and a pinch of ground nutmeg.
  7. 7. Grease a baking dish with small pieces of butter.
  8. 8. Place the noodle-cheese mixture into the dish.
  9. 9. Sprinkle the top with the Fontina.
  10. 10. Bake the gratin in the hot oven for 15 minutes.
  11. 11. Drizzle the finished gratin with 4 to 5 tablespoons of balsamic vinegar.
  12. 12. Serve the gratin immediately.
