  1. 1. Cook the macaroni in plenty of boiling salted water according to the package instructions until al dente. Drain, rinse with cold water, and let drain well. Blanch the peas for 1 minute in boiling salted water, drain, rinse with cold water, and let drain.
  2. 2. Peel the grapefruit and segment the flesh, collecting the juice. Trim the celery, wash it, and chop it finely. Cut the liver sausage into strips. Also cut the cornichons into strips.
  3. 3. Mix the salad mayonnaise with the lemon juice. Season the mixture with salt, pepper, and sugar. Mix the noodles with it and gently fold in the prepared ingredients.
  4. 4. Scoop small quenelles from the cream cheese mixture using two teaspoons and sprinkle them with pink pepper. Plate the salad and serve with the cream cheese quenelles.
