🍝 Noodle Tortilla

Ingredients
- 350 g Spaghetti
- 1 Onion
- 1 Garlic clove
- 2 tbsp Olive oil
- 300 g Tomatoes
- Salt
- Pepper (from the mill)
- 3 tbsp Butter
- 75 g Parmesan
- 4 Eggs
- 1 ball Mozzarella (125 g)
- 75 g Salami
- chopped parsley
Instructions
- 1. Cook the noodles in plenty of salted boiling water until al dente. Drain them, rinse briefly with cold water, and let them drain well.
- 2. Blanch the tomatoes briefly in boiling water, shock them in cold water, peel off the skin, quarter them, remove the seeds, and dice the flesh into small cubes.
- 3. Peel and dice the onion and garlic. Sauté them in hot oil in a pot. Add the tomato cubes, season with salt and pepper, and let the mixture simmer for about 5 minutes.
- 4. Cut the drained noodles into smaller pieces. Mix them with 1 tablespoon of butter and the grated Parmesan.
- 5. Whisk the eggs and stir them with the tomatoes into the noodles. Mix everything well. Cut the mozzarella and salami into small cubes.
- 6. Heat 1 tablespoon of butter in a large non-stick pan. Add half of the noodle-egg mixture to the pan, scatter the mozzarella and salami cubes over it, and cover with the remaining noodle mixture. Let the tortilla set for about 10 minutes.
- 7. Carefully flip the tortilla using a large plate. Add the remaining butter and finish cooking for another 5 minutes. Serve sprinkled with fresh parsley.
