🥗 Fresh Noodle, Ham, Arugula and Tomato Salad

Ingredients
- 400 g short tube pasta (e.g. Sedanini)
- salt
- 250 g arugula
- 200 g cherry tomatoes
- 150 g turkey ham (sliced)
- 4 tbsp white balsamic vinegar
- 1 tbsp lemon juice
- 4 tbsp olive oil
- pepper
Instructions
- 1. Boil water in a large pot and add some salt.
- 2. Cook the noodles in this salted water until they are al dente (follow the instructions on the package).
- 3. Drain the noodles and rinse them briefly with cold water to cool them down.
- 4. Let the noodles drain well in a colander.
- 5. Wash the arugula under running water and dry it thoroughly.
- 6. Remove any tough stems from the arugula.
- 7. Tear the arugula into bite-sized pieces or leave it whole, depending on your preference.
- 8. Wash the tomatoes under running water.
- 9. Cut the tomatoes in half.
- 10. Cut the ham into thin strips.
- 11. Put the balsamic vinegar into a small bowl.
- 12. Add the lemon juice.
- 13. Add 2 to 3 tablespoons of water.
- 14. Add the oil.
- 15. Whisk the ingredients for the dressing well together.
- 16. Season the dressing with salt.
- 17. Season the dressing with pepper.
- 18. Put the drained noodles into a large bowl.
- 19. Add the arugula.
- 20. Add the halved tomatoes.
- 21. Add the ham strips.
- 22. Pour the dressing over all the ingredients.
- 23. Gently toss all the ingredients to mix them well.
