  1. 1. Wipe the mushrooms with a kitchen towel.
  2. 2. Slice the mushrooms into thick pieces.
  3. 3. Wash the spring onions.
  4. 4. Remove the root ends and wilted leaves from the spring onions.
  5. 5. Slice the tender green end of the spring onions into thin rings.
  6. 6. Wash the bell pepper.
  7. 7. Cut the bell pepper in half.
  8. 8. Remove the seeds and white interior of the bell pepper.
  9. 9. Dice the bell pepper flesh into small cubes.
  10. 10. Peel the garlic cloves.
  11. 11. Chop the garlic finely.
  12. 12. Rinse the chicken breast under cold water.
  13. 13. Pat the chicken breast dry.
  14. 14. Slice the chicken breast across the grain into very thin strips.
  15. 15. Heat the oil in the skillet.
  16. 16. Fry the meat strips, mushrooms, onions, and garlic over medium heat.
  17. 17. Stir frequently while doing so.
  18. 18. Fry the mixture for about 3 minutes.
  19. 19. Season the mixture generously with salt and pepper.
  20. 20. Keep the mixture warm under a lid.
  21. 21. Cook the noodles according to the package instructions.
  22. 22. Drain the noodles.
  23. 23. Let the noodles drain well.
  24. 24. Mix the noodles with the mushroom, vegetable, and chicken mixture.
  25. 25. Serve the dish on pre-warmed plates.
