🥗 Colorful Noodle and Vegetable Salad with Fried Fish

Ingredients
- 100 g whole wheat pasta
- salt
- 200 g small salad cucumber (0.5 small salad cucumbers)
- 1 yellow bell pepper
- 175 g cherry tomatoes
- 2 spring onions
- 1 small garlic clove
- 2 sprigs basil
- 50 ml tomato juice
- 4 tbsp olive oil
- 1 tbsp red wine vinegar

- 200 g red mullet fillet (4 red mullet fillets)
Instructions
- 1. Cook the pasta in plenty of salted water according to the package instructions until al dente.
- 2. Drain the pasta in a colander and let it drip dry.
- 3. Wash the cucumber thoroughly and cut it in half lengthwise.
- 4. Peel one of the cucumber halves.
- 5. Cut the peeled half in half lengthwise as well.
- 6. Remove the seeds with a spoon.
- 7. Dice the cucumber into very fine cubes.
- 8. Cut the bell pepper into quarters.
- 9. Remove the seeds and wash the pepper pieces.
- 10. Dice the bell pepper into very fine cubes as well.
- 11. Wash the cherry tomatoes.
- 12. Halve the cherry tomatoes.
- 13. Clean and wash the spring onions.
- 14. Slice the white and light green parts of the spring onions thinly.
- 15. Mix the pasta with the cucumber, pepper, tomatoes, and spring onions in a large bowl.
- 16. Peel the garlic clove.
- 17. Finely chop the garlic.
- 18. Wash the basil and shake it dry.
- 19. Pluck the basil leaves from the stems.
- 20. Chop the basil leaves coarsely.
- 21. Whisk the garlic, basil, tomato juice, 3 tablespoons of oil, vinegar, salt, and pepper in a small bowl.
- 22. Pour the salad dressing over the noodle and vegetable mixture.
- 23. Let the salad marinate for 15 minutes.
- 24. Heat the remaining olive oil in a pan.
- 25. Season the red mullet fillets with salt and pepper.
- 26. Fry the fish fillets in the hot oil for 2 minutes on each side.
- 27. Remove the fish from the pan.
- 28. Serve the fish together with the salad.
