🍽️ Norwegian Salmon with Vegetables

Ingredients
- 600 g Norwegian salmon fillet (skinless and boneless)
- 1 red onion
- 1 red bell pepper
- 0.5 leek
- 1 carrot
- 0.5 zucchini
- 8 red cherry tomatoes
- 3 tbsp olive oil
- 1 tsp thyme
- 1 tsp oregano
- salt
- pepper
- sour cream (light or crème fraîche)
Instructions
- 1. Preheat the oven to 200 degrees.
- 2. Divide the salmon fillet into serving portions.
- 3. Cut the onions into wedges and the peppers into cubes. Slice the leek, carrots, and zucchini.
- 4. Mix the olive oil with the vegetables and herbs. Place the mixture in an ovenproof dish. Pour a few tablespoons of water over the vegetables.
- 5. Place the salmon on top and cover the dish with aluminum foil.
- 6. Bake the dish in the oven for 20 minutes.
- 7. Add crème fraîche or sour cream to the salmon before serving.
