Ingredients
- 4 eggs
- 2 tbsp heavy cream
- 50 g North Sea shrimp
- 5 g butter
- 1 pinch curry
- salt
- pepper (from the mill)
- chives (for garnish)
Instructions
- 1. Whisk the eggs vigorously with the cream in a bowl until the mixture is smooth and uniform.
- 2. Heat the butter in a frying pan over medium heat.
- 3. Pour the egg and cream mixture into the hot pan.
- 4. Sprinkle the North Sea shrimp evenly over the eggs.
- 5. Season the dish with salt, pepper, and a pinch of curry powder.
- 6. Stir the eggs slowly over moderate heat until they begin to set (coagulate).
- 7. Remove the pan from the heat and let the scramble finish cooking using residual heat.
- 8. Garnish the finished scramble with freshly chopped chives.
- 9. Serve the dish warm, optionally accompanied by fresh baguette.
