Ingredients
- 50 g powdered sugar
- 1 tsp lemon juice
- marzipan paste
- red food coloring
- sugar lens
- colorful sugar beads
- 150 g butter
- 250 g honey
- 250 g brown sugar
- 100 g ground almond kernels
- 450 g flour
- 1 tsp cinnamon powder
- 2 tsp gingerbread spice
- 1 tsp lemon zest
- 1 egg
- 1 tsp potash
- 2 tbsp rum
Instructions
- 1. Place butter pieces, honey, and sugar in a pot.
- 2. Heat the mixture while stirring constantly until the sugar has completely dissolved.
- 3. Pour the hot mixture into a large mixing bowl.
- 4. Let the mixture cool down in the bowl.
- 5. Add the almonds, 400 grams of flour, all spices, and the egg to the cooled mixture.
- 6. Knead everything thoroughly using a hand mixer with the dough hook.
- 7. If the dough seems too dry, add a little more flour.
- 8. Stir the potash (a leavening agent) in a small bowl with the rum until smooth.
- 9. Add the rum-potash mixture to the dough.
- 10. Continue kneading the dough until it shines and no longer sticks to your hands.
- 11. Cover the bowl with plastic wrap.
- 12. Let the dough rest in the refrigerator overnight.
- 13. Preheat your oven to 180 degrees Celsius with fan setting.
- 14. Line a baking sheet with baking paper.
- 15. Roll out the dough on a lightly floured surface.
- 16. Cut out shapes of your choice, such as pcs Nicholas faces or stars.
- 17. Place the cookies on the prepared sheet.
- 18. Bake the cookies in the oven for 15 to 20 minutes until golden yellow.
- 19. Carefully remove the cookies from the sheet.
- 20. Let the cookies cool on a wire rack.
- 21. Stir the powdered sugar with enough lemon juice until you get a thick glaze.
- 22. Knead the marzipan with red food coloring.
- 23. Roll out the colored marzipan.
- 24. Cut out triangular hats from the marzipan.
- 25. Place the hats on the cooled cookies.
- 26. Press the hats down slightly.
- 27. Fill the sugar glaze into a piping bag.
- 28. Pipe the beard, eyes, and hat decorations onto the cookies.
- 29. Place a small dot of glaze for the nose.
- 30. Put a chocolate lens on the glaze dot.
- 31. Decorate the eyes and the hat with sugar pearls.
- 32. Place a small mouth piece made of marzipan on the glaze beard.
- 33. Let the decorated cookies dry.
