  1. 1. Prepare a small bowl of vinegar water. Dip your hands briefly into it so the rice does not stick.
  2. 2. Divide the sushi rice into 8 equal portions.
  3. 3. Shape each rice portion into an oblong patty or oval ball using your damp hands.
  4. 4. Cut the mackerel fillet into 8 equal pieces.
  5. 5. Spread a thin layer of wasabi on the underside of each mackerel piece.
  6. 6. Place a rice ball onto the wasabi-coated side of the mackerel.
  7. 7. Press the rice ball down gently so it sticks.
  8. 8. Hold the nigiri in your left hand. Press down on the rice with the tip of your left thumb to stabilize the shape.
  9. 9. Turn the nigiri over so the rice side faces down.
  10. 10. Reshape the nigiri with your fingers if necessary to ensure it looks neat.
  11. 11. Repeat steps 6 to 10 for the remaining mackerel nigiri.
  12. 12. Cut the nori sheet into 8 narrow strips.
  13. 13. Wrap one nori strip around each nigiri.
  14. 14. Lightly moisten the ends of the nori on the underside of the nigiri with water.
  15. 15. Press the ends together so the nori stays in place.
  16. 16. Arrange the finished nigiri with the rice side facing down.
